For owners Mia and Tim Tracey, the journey began eight years ago with Pickle & Pie, their first venture into the food world. By 2020 — in the midst of a pandemic that had the whole country baking from home — Tim decided to turn his newfound sourdough obsession into something bigger. Encouraged by the local Upper Hutt Mayor, they took the leap and opened Dough Bakery in Mia’s hometown, just as New Zealand emerged from lockdown. It wasn’t just about selling bread and coffee — it was about creating a space that reflected the warmth, resilience, and personality of the people who would walk through their doors. Today, Dough is more than a bakery; it’s a place where mornings start with the smell of fresh loaves, where neighbours catch up over coffee, and where every bagel or pastry has been made by hand.
